OnlineAthens: Business: Downtown coffee shop calls it quits 12/28/04

Aynes, a Blue Sky co-founder and partner who managed the cafe’s transition from a coffee shop to a restaurant five months ago, said the business “simply ran out of cash to fund our operations, which were not yet generating a profit.”

Aynes said he realized in January that Blue Sky, which started in October 1995 as a “bohemian coffee shop,” must adapt its business approach or face gradually declining sales. The adaptation – transforming Blue Sky from a simple coffee cafe to a full-service restaurant serving lunch, dinner and alcohol – required the owners to lease the space next door and complete a costly renovation.

They completely ruined it as a coffee shop when they went restaurant. They should have just done away with the coffee idea and gone for a new deal altogether instead of trying to have both. I also have heard that the ideas for the “Big Shot” bar opening on College Ave is kind of dead. It’s all about the Hot Corner/Clocked/Flicker/Manhattan world now. None of this weird College Square Middle Ground with the frattastic side of town.

    I can’t believe it! I’m so sad… best lunch in town for the money… And they *just* renovated! You’d think they’d give it more time to catch on and make money.
